Another favorite, frequently-used Christmas present is a Rachel Ray cookbook. I've never actually seen her show, but after buying one of her cookbooks for someone else, I had to go back to the bookstore and get one for myself (using a Barnes & Noble gift certificate Santa brought me...).
I made spaghetti carbonera last night - haven't had that since I lived in Italy when I was a kid. Tonight I'm planning an Indian chicken dish (chicken tikka, I think?). I've really expanded the range of spices and ingredients I'm buying and using. It's a lot of fun exploring and experimenting with new foods, flavors, etc.

Yeah, but if you add a little ground beef to 'em, they taste pretty good. :)
Actually, I think she might even have a vegetarian cookbook...

Hey, thanks to everyone! I checked and Rachael Ray does have a Veggie Meals cookbook.
I haven't seen a 30min book dedicated just to Indian dishes, but the one I got (30 Min Meals, book 2) has quite a few Indian style entries.
BTW, the Chicken Tikka last night was fantastic! Plain yogurt, curry paste, lemon juice and a few other goodies. Yum, yum, yum!
Talk about expanding your choices, when my wife found a Whole Foods Market here in Vegas, she went crazy. Honestly, I've never seen so many different types of food...the place is a Mecca for food enthusiasts
